A food truck lets you run a restaurant without the biggest fixed cost: a long lease on a dining room. That matters in a market where, according to the National Restaurant Association, real sales growth is only about 1.3% in 2026 and costs keep rising. See the full restaurant and food service industry profile.

Who it suits

Cooks with a clear concept who want to prove it before opening a restaurant, and people who enjoy events, crowds and long days.

Startup costs

The truck is the biggest cost. A used truck with working equipment costs far less than a new custom build, but inspect the kitchen equipment, generator and plumbing carefully. Budget for wraps and signage, a point-of-sale system, permits, insurance, commissary kitchen rent and opening inventory.

Permits decide your business

Rules vary a lot by city. Expect a health permit, food handler or manager certification, a fire safety inspection and vending permits. Many cities require you to prep food and park overnight at a licensed commissary kitchen, and some limit where and how long you can park. Read your city’s rules before you buy a truck.

How it makes money

Street service at busy lunch spots, breweries and office parks. Events and festivals bring big days. Catering and private bookings (weddings, corporate events) are often the most profitable, because you know your volume in advance.

Keep the menu tight

A short menu of five to eight items speeds up service, cuts waste and makes costing simpler. Price each dish so food cost stays a manageable share of the price, and recheck when ingredient prices move.

Watch out for

Weather, breakdowns and long hours. Diversify with catering so a rainy week doesn’t wipe out your month.
